I'm a big fan of packed lunches.
There's something deliciously comforting about knowing lunch is already waiting for you. Just sitting there, whispering to you from the fridge.
While all everyone else wraps up and heads out into the cold, you can just pad over to your little brown bag and get stuck in.
I like to spend as long as humanly possible in bed come sunrise, but I hate soggy sandwiches.
Thankfully these little Italian stallions can be made the evening before. They pack a serious flavour punch and maintain their structural integrity.
Trust an Italian to stay strong all night long!
Grab one large basil plant, and roughly tear all of the leaves off. Throw some of the stems in too. Put them into a food processor with 50g of raw pine nuts, a cup of grated parmesan, two smallish cloves of garlic, half a cup of olive oil and a large pinch of salt.
*If you really can't be bothered to make your own, buy a pot of fresh pesto from the fresh pasta section of the supermarket.
Split them, brush a very thin layer of olive oil on the bottom slice and pile on a good layer of meat.
Top with slices of mozzarella & your tomatoes.
Add more meat and spread the top of your bread with a generous layer of pesto.
Sandwich.
Now wrap in cling film as tightly as you can.
Pop them into the fridge with a chopping board and a few cans on top.
It needs to be evenly pressing them without totally squishing them.
The next morning they should be ready to unwrap and go into your lunchbox. Rip them open and use a bread knife to neaten up the edges, eating all the cut offs.
Package them up, throw in some crisps, something naughty for pudding & you're all set.

Ok, you'll need:
2 bread rolls (preferably focaccia)
Sliced cured meats
Bufallo mozerella
Sundried tomatoes
Homemade pesto (remember we made this when we made Proper Pizzas?)
-Basil leaves
-Pine nuts
-Parmasan
-Garlic
-Olive oil
Start by making your pesto.
Homemade pesto is a completely different animal to the stuff you buy in a jar. It's punchy, fresh & just oozes flavour!Grab one large basil plant, and roughly tear all of the leaves off. Throw some of the stems in too. Put them into a food processor with 50g of raw pine nuts, a cup of grated parmesan, two smallish cloves of garlic, half a cup of olive oil and a large pinch of salt.

Package them up, throw in some crisps, something naughty for pudding & you're all set.
Prepare yourself for jealous stares and the possibility of fridge theft.
It's not easy being this deliciously rugged in a world of soggy sandwiches.

so happy i've stumbled across your blog - i'm only 17 and you're actually inspiring me to make my own food! ...you must be doing something right haha x
ReplyDeleteThat's great news Tara! Keep it up! xx
DeleteOooh, I want. this looks like the most delicious packed lunch ever
ReplyDeleteUhhh that looks delicious! Even though I am veggie I am dying to try it out!
ReplyDeleteDo you have any recommendations what kind of bread would serve best if wheat is no option? (Ahh, I know,,,, all those picky people ;-))
Love your blog!
Svenja
xx
I think I'd probably give it a miss if you can't have wheat, Svenja. Sorry about that! xx
DeleteThank you, Rosie -- no probs.
DeleteI will skip this one then and enjoy other good things ;-)
Warm regards,
Svenja
This looks so delicious! The bread looks amazing - where is it from?
ReplyDeleteWaitrose
DeleteThank you!
DeleteWow wee that looks amazing! I love making my own yummy sandwiches for work... but it only happens around once a week when I'm actually up early enough to do so!
ReplyDeleteThis looks amazing! So much better than a typical boring run of the mill sandwich.

I see myself taking this with me to the beach/ for a midnight stroll/up in the mountains for a hiking lunch. My god..its the perfect sandwich. How do you pick such lovely sun-dried tomatoes? I love them to bits when i'm out to eat but whenever I buy them in the supermarket they taste awful. P.s you rock.
ReplyDeleteTry and seek out a little italian deli, they'll have delicious ones in olive oil x
DeleteLooks super delicious! <3
ReplyDeletexx
Thank you for this inspiration, but coming lateee - I've just finished my lunch, haha. So maybe next time I'll come back and try to get inspired 8-)

Wonderful and Marvelous
Really nice! I'm going to try it tomorrow, can't wait!
ReplyDeleteLet me know how it goes!
DeleteThese look amazing! I hate a soggy sandwich (it sends a shiver down my spine just thinking about it) but everything about this is making me hungry. I do agree that people would have a Ross Geller (Friends) situation on their hands if they leave them in their work fridge.

'*If you really can't be bothered to make your own, buy a pot of fresh pesto from the fresh pasta section of the supermarket.' That made me laugh. Also in reference to the first post. I'm an 18 year old boy and you inspire me to also make my own food. Magic. x
ReplyDeleteExcellent news! x
DeleteDid you make this for your boyfriend?
ReplyDeleteWhat sort of a weird ass comment is this?
DeleteWe're all curious to know what she cooks for her man!
DeleteI love to pack my lunches too! I can choose exactly what I eat and it's so much cheaper, too.
ReplyDeletecheaper, healthier, customized, interesting, fun, and other people are always secretly jealous
Deletewin/win/win/win!
DeleteThat. Looks. Amazing!
ReplyDeleteMust try making them :)
It's 7am and this made me want an Italian sandwich for breakfast! Amazeballs!!!
ReplyDeleteOh I love non-breakfast foods for breakfast!
DeleteI bet they're nice toasted mmm metlted mozzarella!

DeleteYou've done it again Rose! I'm in serious cravings of an Italian holiday right now so these came at the right time.
ReplyDeleteCan I ask, how did you get so good at making recipes? Just paying attention when at restaurants etc.? :)
Mostly from my mamma! She's an amazing cook and I always loved watching her in the kitchen.
DeleteShe's my inspiration for most things to be honest! x
That's lovely! I'm sure she's proud of how you're passing the wisdom over to other young men and women in need of some kitchen education!
Deletewow. xx
ReplyDeletethemusingsofateenagemind.blogspot.co.uk/
Please do some more healthy recipe posts, need to lose them pounds before Christmas! Xx
ReplyDeleteWill do! x
DeleteThis looks so tasty! Winter is the perfect time to start packing your lunch more so you don't have to brave the slippery roads. xoxo
ReplyDeleteYummers! When I was studying in Florence, Italy, I discovered a tiny, hole-in-the-wall sandwich shop, and the panini they made were very similar to this! Delicious fresh pesto and big slabs of fresh bufala mozzarella! Looking at your pictures brought me right back!
ReplyDelete@Corey, OMG, was it the oil shop (in Italian, not English)? Run by an American man? If so, I know exactly what place you are referring to and it was fabulous.
DeleteIm always waiting for your next post.i go to ur blog everytime i need to cheer up. Love everything of course. You're Aesthetic sense is to die for. Pls let us know how the hell you look so good. Theres not enough on that.
ReplyDeleteLooks delicious, that's lunch sorted for tomorrow!
ReplyDeleteYUM!
ReplyDeletelooks delicious, but are you drinking coke again? your anti-diet seems to have been quite a strong advocate of banishing that from one's fridge:)
ReplyDeleteCoke wasn't for me ;)
DeleteI had elderflower cordial & water x
What exactly is elderflower cordial? I'm from America if that makes up for my ignorance, haha.
Delete
DeleteElderflower Cordial
Would this be considered the 80% healthy part of the anti-diet, or 20% naughty?
ReplyDeleteMmmm... sort of somewhere in the middle. It's not particularly bad or particularly good. Just pay attention to the hunger scale and you'll be fine! x
DeleteThank you! I've been reading your blog for some time now and I just adore it. Just thought you should know :)
DeleteThe bread is hardly amazing for you although it seems to differ a lot from person to person. Wheat has lately been seen as significantly less healthy than ye olde food pyramid would have you believe.
DeleteWhat's your opinion on late night munchies Rose, just keep thinking about the hunger scale? Thank you :)
DeleteMight be worth re-reading the post Anon as it sounds like you might be giving in to emotional hunger rather than actual hunger.
DeleteI know it's unbecoming (and pointless) to lick one's monitor, but those sandwiches make such behavior tempting.
ReplyDeletebest comment ever.
Deletewow looks good, i love italian food !
ReplyDeletethis looks so delicious but something about sandwiches always seems to leave me feeling overly full - think I will try with a wholemeal wrap although that's just not going to look as good as this...
ReplyDelete♥ Thankfifi
Looks delicious, like the flavour combinations you have going on. They're certainly very pretty looking too.
ReplyDeleteWho knew homemade pesto was so easy?
Ohh ma gawd that looks yummy. Home-made pesto really is so much better than store-bought. Just wish I had the time! Meal planning for this week right now, so thanks for the good lunch idea xx
ReplyDeleteSilly question - have you ever thought about launching a cook book? I absolutely adore your recipes and I genuinely believe you have enough of a following that it would be a success! I try pretty much every single recipe you put up. Looking forward to the next one already! xx
ReplyDeleteThat looks simply delicious...and cheap!

ReplyDeleteHi Rose, I am at school and I love you and your blog. You are my inspiration, the kind of person I want to be when I'm older. Recently I have lost quite a bit of weight, but I still have a little left...how long do you reckon 7 pounds will take to loose if I follow your anti-diet?
ReplyDeleteAlso, you have an amazing body, what do you do to keep looking so good??
Thanks and I hope you are well.
xoxo
I'm so hungry now, thank you. haha. Those look delicious. xNel
ReplyDeleteDear Rose,
ReplyDeleteI just started uni and I busy applying for all sorts of positions in different societies just like you advised us to do! :-)
I have a marketing position interview coming up and I feel that you are a marketing guru! What is needed in this position is promoting events, being a good salesperson, and having some sort of background in graphic design.
Could you possibly give me any tips and ideas on how to impress the people interviewing me? Maybe some ideas on promoting the society, how to present my graphic design portfolio, or what sort of portfolio to have? (because you've mentioned that you were also pretty involved in this in uni)
Any help would be greatly appreciated!
Love,
Elli
PS, I'm making a sandwich like this tomorrow. yum
Now I know what I am going to be making ahead and enjoying for lunch next week! UCLA is up a hill, and I live at the bottom of it, so I try to stay up there for meals when I can pack my own!
ReplyDeleteThis looks really delicious! Tried your proper pizzas last week and I'm hooked. I'd also love to see more of the 80% recipes - referring to the anti-diet - since I like to be a healthy student (it's hard to resist all the temptations London has to offer!)
ReplyDeleteRose, I'm from Italy, and I can say that this sandwich it's really italian tasty!
ReplyDeleteI'm always interested in your recipes!
XOXO
Cami
That looks exactly like a Spianata&Co sandwich. Is that what inspired this sandwich? They do great coffee. That's my little tip to you.
ReplyDeleteI absolutely love love your blog! I've started up my own and hopefully I'll have it as great as yours soon!
ReplyDeleteI rarely comment...but this sandwich deserved a comment. This is like my dream sandwich, only better. You amaze me!
ReplyDeletevivthediv
Is it bad if I want to just eat that bowl of pesto with a teaspoon?
ReplyDeleteno, I have actually done that before.
DeleteThis makes me want to make a packed lunch for the first time in years!
ReplyDeleteLovely post,

So glad I came accross your blog! You're inspiring me (embarrassingly so at the age of 22) to cook. I've been afraid of fire and ovens etc since I was little but now i'm starting to cook things from scratch, might not be up to your standards yet but you've got to start somewhere, right?
ReplyDeleteLook forward to your blog and definitely spent far too much time procrastinating reading and catching up on every one of your blogs. You're so gorgeous! Great work and thank you!
