These cracking little cookies are ideal when you don’t have much in the house, or should you find yourself need a quick midnight snack.

Once you’ve made them once you’ll be able to whip them up with your eyes closed. (If you do please film the experience for our viewing pleasure!)

To make a batch of about 10 you’ll need:

1 cup of peanut butter (the kind with just nuts, no added sugar or oil) 

1/2 cup of sugar (or switch it out for monk fruit sweetener/Erythritol if you’re sugar free, you wont be able to tell the difference)

1 egg

Pre-heat your oven to 180c/350f.

Mix together all of your ingredients.

Scoop out a tablespoon and roll it into a ball with your hands.

Place onto baking parchment covered tray.

Squash the cookies flat.

Bake for 10-15mins, until they turn dark around the edges.

Cool on a wire rack.

Once they’re set, enjoy!

Particularly good with a glass of chilled milk.

If you’re feeling crumby, these are just the ticket.
