Cocktail Hour

We’re
just
about to slip into the weekend.
It’s Friday afternoon, the finish line is in sight.
The end of a long week, deserves a celebratory long drink.
So here we have it, Summer in a glass;
Pink-Elderberry-Fizz

They’re really easy to make, whether it’s for one, two or a group. 

You will need:

Strawberries,

Lemons,

Elderflower cordial,

Sugar,

Ice,

Prosecco.

Add 1/2 a cup of water, and 1/2 a cup of sugar to a pan and bring to the boil. 

Turn the heat down a little and keep stirring until it becomes a sugary syrup. 

Stir in 1/2 a cup of elderflower cordial and keep on the heat for a couple more minutes. 

This syrup will be the base of your cocktails, so once it’s done, take it off the heat and leave it to cool. 

Put it outside if you’re in a bit of a rush. 

Next muddle some strawberries with a cocktail muddler or the end of a wooden spoon. 

They don’t need to be completely smooshed, just enough to get the juices flowing.

Once cool, pour a little of your syrupy mixture into a glass, top with the muddled strawberries, a slice of lemon and some ice on top. 

This will help keep the mixture in place and just gently infuse your cocktail, rather than turning into unattractive sludge. 

Pop open your prosecco and pour it in. 

Enjoy the crackle as the bubbles hit the ice, sit back, smile and relax.
