2min Baileys Bread ‘n’ Butter Pudding

I’m not even kidding when I say this might be the best recipe I’ve ever posted.

Yep, even better than the original Slutty Brownies.

This is made for those nights when you’ve been really good all day, then suddenly out of nowhere comes that pudding craving. You simply must have something sweet to eat while you watch that film you’ve been saving for a rainy night.

In two shakes of a lambs tail you can be snuggled up with pudding in hand and ready to go!

To serve one (multiply as needed) you’ll need:

1 slice soft white bread/croissant/brioche/hot cross bun – you get the idea

1tsp butter 

1 egg 

3tbsp Baileys (or milk if you prefer)

1tbsp sugar 

1tbsp chocolate chips/raisins

Add your egg, Baileys and sugar to a microwave safe mug.

Beat with a fork until combined.

Butter your bread with that *ahem* “1tsp butter”… use more if you like! Then tear the whole lot up into little bitesized chunks. 

Put the bread bits into the mug along with the chocolate chips and gently stir it all through. Don’t make a mush, just make sure it all gets a good soaking. 

Pop into the microwave* for two mins. 

*If you don’t have a microwave, bake at 180c/350f for 20mins. Just make sure your mug is oven safe.

Carefully remove your melty delicious creation.

Serve with a scoop of ice cream, a dribble of cream or a good dollop of custard.

Eat snuggled up in your softest blanket with your favourite film.

A good rule is anything by Nora Ephron or Christopher Nolan. Just saying.

Scoop to your heart’s content!

  • Rose, this looks like the best indulgence recipe for when you don’t have a big family or bunch of guests to help you finish a batch of slutty brownies. Don’t get me wrong, I’m hooked to slutty brownies, and I have bought ingredients for when the baking bug strikes. It is however awkward to bake when there are only 3 people in the house and you are not a popular person who can invite 20 mates over.

  • Now I’ve examined (with a very distrustful eye) all these ‘dessert in a mug in a microwave’ recipes before, wary to give any more than the few so-very-undelicious I’d already tried a go. However, I wholeheartedly agree that this more than deserves to be tried. And tested. Possibly repeatedly. For science. I don’t think anything has looked more delicious, ever, and I can’t wait to try!

    Oh, and completely agree: butter levels in recipe should always be more of a ‘loose guideline’….
