Blue Banana Pancakes {Grain Free/Bloat Free!}

Ever since Sunday’s brunch, all I’ve been able to think about are those pancakes.

The stacks of floury wickedness, topped with bacon and slowly melting butter… they were something special! But heavy as anything. After a stack, you really know you’ve had a stack!

So this morning I whipped up a lighter, grain-free, fruit stuffed option.

All the joy of pancakes, none of the bloat, with bags of potassium*.

*Which makes you happy!

I’ve been curious to try this recipe for a little while.

It’s been doing the rounds on all of those “keep fit/thinspo/healthy/workout” Instagram pages. I have no idea where it originated from, but if you do please let me know.

The recipe invariably calls for 2 ripe bananas and 1 egg. That’s it!

I was worried they would taste like eggy banana, but with just a couple of additions they really do taste just like fluffy banana pancakes. My man had no idea there was any difference between what we had this morning and the ‘real deal’ we had on Sunday.

So you know it’s a winner!

Not a bad lookin’ bowl of fruit ^!

To make a stack of 4-5 pancakes, you’ll need:

2 large bananas

1 large egg

Pinch of cinnamon

Pinch of baking powder

Sprinkle of blueberries (or chocolate chips if you’d rather, cheeky.)

Syrup/Bacon/Berries/Butter for serving (optional)

Start by mashing your bananas as smoothly as possible. Beat in your egg and keep smoothing it out with a fork. You want it to be pretty smooth and lumpless, but don’t blend it or they’ll turn out flat. Mix inย your cinnamon and baking powder.

Heat a heavy bottomed pan with a little butter (or low cal spray if that’s your thing), pour out pancake sized puddles and top with blueberries.

Cook away on a medium heat until the tops start to bubble (just like regular pancakes). Flip ’em over and cook for another minute on this side.

When they’re cooked transfer to a plate with a paper towel on it, keep ย them somewhere warm while you quickly knock up the rest of the stack.

When you’re ready, serve them up!

Top with a little butter, maybe some maple syrup if you’re feeling bad!

Tuck in!

Layer after layer of fluffy pancake with blueberries bursting and oozing all over the place.

Easier than regular pancakes and much better for you. Stuffed with fruit, fibre,ย protein… and bursting blueberries!

They really are flipping good.

In fact, I don’t think they could be batter!

    When i make stacks of pancakes, I heat a bowl of water up in a saucepan and put a plate on top of it – keep it on a low temp and then put pancake on top of plate topped with some greaseproof paper or a paper towel, to stop them from sticking & stay warm!     Hmm this is interesting. Almost all of the healthy pancake recipes I’ve seen (and I’ve seen/made a lot) call for 1 banana and 2 eggs. They taste pretty good but aren’t amazing. Yours look much fluffier, not sure if it’s because of the extra banana or the baking powder but will definitely give this version a try. Thanks!

    I made these this morning (a low fat version so sadly no butter/syrup!) and I would recommend adding some salt as they were a little bland without. I think stirring in a spoon of crunchy peanut butter would also go down a treat!

    But all in all a great little healthy recipe and takes no time at all to whip up!

    I have loved these pancakes for SO LONG. However to make them even healthier, add some cinnamon to the mix and top with honey. Apparently the combination or cinnamon and honey leaves you feeling fuller for much longer (I have no source, and no idea if there’s any science behind this, but it seems to work for me!)

    it’s the 2nd time I attempt to do banana pancakes and the flipping struggle is real, I just can’t flip them, they break while I’m trying to turn them upside down. I was trying to flip the pan into a plate, but they get stuck somewhere so they break anyway. But they are tasty!!!!
