Just a very little recipe post today.
My friend and I just invented this, because it's cold & miserable outside.
So we're snuggling down to watch David Attenborough documentaries all afternoon, with huge buckets of Gingerbread Popcorn.
Complete & utter bliss!
If you fancy joining us, you'll need:
100grams (3.5ounces) of plain popping corn,
1tbsp of oil (we used coconut oil, but you could use any corn or nut oil really)
1 heaped tsp of Stevia (a fantastic sweetener with zero calories but no health risks, unlike other sweeteners)
1/2 tsp salt,
1tsp ground ginger,
1/2 tsp nutmeg
Scatter on your spice mix & voila!
You my friend are now ready for an epic movie session.
All you need now is a snuggle buddy!
Ps. This a much healthier, lower calorie, cheap way of making popcorn. So much better than anything you stick in the microwave & don't even get me started on that evil 'butter' flavoured spray...
Trust me, give proper popcorn a shot, you'll never look back!

Throw your spices, sugar & salt into a bowl and leave to one side.
Heat heat your oil in a large, covered saucepan.
Pour in your popping corn & leap right on it with the lid!
Keep it on a high heat, but keep jiggling it around to keep it from burning. Make sure you keep the lid on, or you'll have popcorn all over the house... and some very happy dogs at your feet!
Keep it on the heat until the popping slows to about one pop every 2 seconds (more or less).
Pour it all out into a large bowl.
You my friend are now ready for an epic movie session.

ReplyDeleteThis sounds great! It's hard to make popcorn taste great, sugar tends to just fall to the bottom of the bowl. I end up smothering it in melted chocolate or syrup, totally destroying popcorn's low fat appeal! So I'll definitely try this.

ReplyDeleteYou're TOTALLY right, you'll never go back with popping popcorn on the stovetop. People's excuse when I tell them I make mine homemade is "I don't have time." Reality check people....high heat is high heat. I feel like it takes me the same amount of time if not quicker to make popcorn on the stove top.
ReplyDeleteRecommendation: even though you're using oil, I highly suggest a nonstick pot making it. The first time I made popcorn I made it in a steel thing and it was a huge pain in my rear end to clean. Nonstick pans I can just lazily rinse it out and it's fine (although you probably want to wash your dishes just because it's a good habit)
I pack homemade popcorn in baggies for work snacks (so I don't get tempted by all the sweets). I can't wait for holiday season and let my coworkers try this!!!!
