This is the ideal brunch recipe.
Just imagine it, it's Sunday, everyone's sleepy, a little hungover and they're expecting you to whip up a storm.
No problem-o.
Sit them down with the papers, something lovely on the radio, perhaps a couple of mimosas, and scuttle off to the kitchen.
You can have these done & dusted within half an hour and emerge triumphantly to ooh's and ahhh's (which will quickly turn into satisfied silence and nods of approval).
So here we have it, my recipe for:
To feed 4-5 people, you will need:
270g plain flour
2 tsp baking powder
1 tsp salt
4tbsp caster sugar
260ml milk
2 large egg, lightly beaten
4 tbsp melted butter & more for cooking
1 pack streaky bacon
Strawberries
Blueberries
Maple syrup
Sift the flour, baking powder, salt and caster sugar into a large bowl.
Once your bacon is sizzled to perfection, take it out of the pan and de-grease a little on some tissue paper.
Keep going until you have a good healthy stack & have run out of mixture (or patience).
Sunday heaven.

BaconCakes
270g plain flour
2 tsp baking powder
1 tsp salt

Maple syrup
Sift the flour, baking powder, salt and caster sugar into a large bowl.
In a separate bowl or jug, lightly whisk together the milk and egg, then whisk in the melted butter.
Add this mixture to your flour and continue to whisk until you have a smooth batter.
Elbow grease should get rid of any lumps, get stuck in!
Once your batter looks like mine, leave it to one side.
Put a large plate in the oven and turn it on to about 50°, you'll use this to keep the pancakes warm as you make them.
Bung your bacon in a pan and fry until crispy.
Once your bacon is sizzled to perfection, take it out of the pan and de-grease a little on some tissue paper.
Put the pan onto a medium heat.
Add a tsp of butter and a piece of bacon.
Once the butter is sizzling away, pour over a ladle of your pancake mixture.
Once the top of your pancake starts to bubble, it's ready to be flipped.
No funny business, we're not making crepes, just use a spatular to flip them over.
Give it a couple mins, scoop out of the pan and add to your plate in the oven.
Keep going until you have a good healthy stack & have run out of mixture (or patience).
Serve with sliced berries, maple syrup, a little butter and some orange juice.
Sunday heaven.
NB: Although these make a fabulous brunch and will earn you brownie points for the next decade... they are also pretty good to enjoy tucked up in bed with your favourite person.
